We have an experienced team of Senior Chefs to provide on the job training in various cooking styles, service operations and managing food costs. But also learn from experienced Managers in people management and profitability. Everything you need for your future career.

 

Duties:

As Sous Chef at the Pretoria you will be responsible for leading and training the team while delivering food service to our guests. You will regularly make purchases from suppliers, ensure food safety actions are being completed and maintain the consistency of our product.

 

Criteria:

The things that are most important to us are delicious food, great cooking skill and a finger on the pulse of current food trends - but equally important is the right personality characteristics and communication style to lead our team well.

The successful candidate will:

· have completed an apprenticeship and hold a Trade Qualification as a Chef or an equivalent international qualification

· have previous experience in a busy a la carte hotel bistro, café or restaurant environment

· be a good leader, communicator and a patient trainer

· be well organised and prepared in their approach to food service

· have some experience at ordering for varying customer volumes

· have a strong knowledge of food safety requirements

· have the ability to work calmly under pressure

This business enjoys an enviable location on the banks of the River Murray in Mannum with uninterrupted views of the river from the main Bar & Bistro and the lawns between.  Including a 250 seat Bistro and balcony, private function room, licensed lawn area on the riverbanks, Sip n Save bottleshop with underground wine cellar, TAB and Gaming facilities plus regular entertainment - the Pretoria has it all.

We expect our Hotels to have and use standard recipe cards, prep sheets, prep lists, cleaning rosters, temperature check sheets and to thoroughly check off incoming deliveries - these are essential elements of good food businesses

Our buying power is focused into accessing discount from purchase prices to make margin as easy as possible to achieve for each Hotel. This results in the highest quality produce being able to be included in menus at everyday prices and is great for repeat business.

Maintaining our equipment is a priority supported by on-site and group maintenance employees with agreements in place for repairs and new purchases.
